原材料:黑鱼一条(我买的比较小7两,正好适合两个人吃),酸菜(李记牌的,用了半袋),料酒,盐,生粉,泡椒,姜,蒜,干红辣椒,花椒

洗净鱼后将头尾去掉,再把骨头剔下

然后进行切片,切片我有三种方法,第一种方法 从鱼皮开始切,可以第一刀不切到底,第二刀切到底,然后打开(第一刀要掌握深度,若太浅则容易断,太深下鱼片时不容易打开) 第二中方法,从鱼肉向鱼皮切刀碰到鱼皮时你的手会有一种感觉,此时停刀,再切下一刀,效果应该会更好,第三种方法:就是普通的片鱼,将刀倾斜一片一片的把鱼片好,本次作的方法采用了第一种:-)强烈推荐第二种方法:-)

片好鱼后我们再重新看看原材料,鱼去骨切片,姜切片,蒜剁碎_y[E4|,q

用鱼头鱼骨制汤,开锅后盛出,此时鱼片中加入料酒,盐,生粉水进行腌制

锅热后下油,油四成熟加入蒜姜,(这次买菜没有送葱,正常也要放葱) M'~|;t ^;N

放入酸菜翻炒三分钟Q7~1{ Xp

翻炒后加入刚才制作的鱼头汤,再放几颗泡椒*T*B:VA%S!a/HwI

开锅后继续煮10分钟,将腌制好的鱼片一片一片下锅,忘记照下鱼片的照片了,汗啊,全部鱼片入锅后不要搅拌(原因1保持鱼片完整,2因为鱼片上有生粉,一旦搅拌后一锅鱼汤就会变得很粘稠),两分钟后可以出锅。&g-h4q&|,X*f

锅洗净后烧热,加油,四成熟加入花椒,干红辣椒,炒出香味即可O1nw&uA HJO
